Paul inherited the Foods of Athenry dairy farm back in the 1980's and together with his wife Siobhain they used their knowledge of cooking and farming, as well as the six new willing tasters in the house to create a wide range of bakery products catering to many dietary needs, including gluten free.

The love of good food is something that was, and still is, a family passion, along with a lifelong interest in the relationship of food and health, they operate a ‘clean label’ philosophy.
